Tequila!


Well, actually there isn't any tequila in these but that is where the inspiration came from. When searching for ideas for Cinco de Mayo desserts I found pictures from Cinco de Mayo a couple years ago. These mini trifles have layers of lemon lime cake and whipped topping, tinted green with food coloring, and garnished with lime zest. The rim is coated in lime juice and dipped in sugar. From what I remember they were quite good and the only complaint was that the "shot" was not large enough.

Lemon Pecan Cookies for Grandma

Over Christmas weekend my grandmother gave me some pecans so I thought I would return the favor by baking her a batch of cookies. I found a recipe for orange pecan cookies using an orange cake mix, unfortunately, I didn't have orange but did have a lemon mix and lemon is my grandmother's favorite flavor so it worked out perfectly. The recipe called for vanilla yogurt but I used lemon instead, glad I did because I feel they had the perfect amount of lemon flavor. I also added a teaspoon of vanilla extract and a tiny bit of coconut extract. My husband thought they were delicious. Hope Grandma agrees.

Headed to the Coast



My mother-in-law requested lemon cake balls to take with her on her trip to see her sister in Hilton Head, South Carolina. Happy 97th Birthday Grandma

For the past 17 years or so we have been trying to get together to celebrate my grandmother's birthday. Every year it seems to get a little bigger. This year the family took my grandmother to church and after had a light lunch at my parent's home. I was in charge of the dessert buffet. The menu included brownie bites, raspberry cheesecake bites, and my mom's lemon cake bars. Happy 97th Grandma! I better start planning for next year.
